3rd Floor CHA employees

This month’s employee story is actually about a group of employees who work on the 3rd Floor City Hall Annex. Instead of just continuing to talk about eating healthier, they decided to do something about it. Barb DeVora, Workers Compensation Claims Processor, submitted the story below:

“The conversation started over a burger and fries with some of the women on the 3rd Floor at the City Hall Annex. Like often at all lunches, inevitably someone would say “I should be having a salad”, which would be quickly followed by others who would chime in about their desire to eat healthier; one person may be “gluten free” while another may have concerns about diabetes. We all agreed that the food options downtown were limited and expensive. Earlier in the week, I had a wonderful Apple/Cranberry salad at a restaurant and was able to find the recipe online. I asked if anyone would be interested in trying it. Everyone said “Yes!” We then started talking about the idea of having salad one day a week. We’d each bring an item. We’d be eating healthier, and we’d save money. Thus, “Salad Thursdays” was born.

Each week, a sign up sheet is posted on the refrigerator. Everyone in our department is invited to sign up to bring an item. On Thursdays, we put the items on a table in the conference room. While most of us sit together, it’s not a requirement. Some will take their salad with them to their office/desk. But, for those of us who sit together, it’s a great way to get to know your co-workers better. After all, Monday-Friday we’re a community.”

Below is the salad recipe that launched Salad Thursdays:

Apple Cranberry Salad

DRESSING
1/3 C Apple Cider Vinegar
1/3 C Honey
¼ C Olive Oil
1 tsp cinnamon
1 tsp dry mustard
½ tsp salt (optional)

SALAD
Spring Mix Lettuce
Dried cranberries (sub: Craisins or strawberries)
Chopped Granny Smith Apples
Chopped Walnuts or Pecans
Gorgonzola Cheese (Optional; skip if lactose intolerant)
